Frozen Mash

My eldest decided to watch the latest cookery programme having listened to me muttering about frozen mashed potato and tinned mince all week. I have nothing against tinned mince as I used it when we went camping last year – I find it easier and cheaper to make extra mashed potato on a Sunday, pop it in the fridge overnight and use it up on a Monday.

Anyway, this week pesto – eldest daughter decides that she wants to make pesto herself – knows it is not too difficult as she made it last year when she came to the Oxford Childrens Food Festival. Saturday afternoon, youngest is making chocolate Easter cake with husband, eldest is making pesto and I am making wheat free pasta in readiness for Allergy Workshop next week.Two hours later, husband absolutely shattered and vowing to go out next time we all decide to do some cooking and we sit down to home made pasta with pesto and green veg (sugar snap peas and asparagus), followed by chocolate Easter cake. Extra pesto in fridge for meal later on in the week, or I might make some pesto scones. Pasta bagged up and frozen ready for meals in the week.All in all, a good afternoon’s work, especially as youngest took only 20 minutes to eat her tea, instead of the usual hour and a half!
