Birthday Cake on the Barbeque
My daughter’s 12th birthday was while we were on holiday on the Ile de Re in France this summer and I had to figure out how to make her a birthday cake in the tent, or rather outside the tent. Not sure if it would work but had a go anyway.
Basic sponge mixture, 100g SR Flour, 100g caster sugar, 100g butter, 2 eggs and two 8 inch cake tins,one for the cake mix and the other to raise the tin above the heat a little. We lit the bbq, a gas one, around 20 minutes before putting the cake on it and kept the lid closed to heat up the inside space – so it may take a little longer to heat up a charcoal bbq but should still work just as well. We were worried about the cake smelling and tasting of sardines and merguez sausages but miraculously it didn’t.
I then place the empty cake tin upside down on the grid with the cake mix tin on top of it, closed the lid and kept my fingers crossed. 25-30 minutes later we had a lovely spongy moist cake with no dodgy sausage flavours. The top didn’t brown very well but that was covered with icing so it didn’t matter.
I also made a couple of fairy cakes with extra mixture, these were really easy and great if you don’t have a cake tin. All you need is some aluminium foil and baking parchment. Rip up some squares of each and make the foil into a deep cup to hold the mix, line with baking parchment to stop it sticking and place a table spoon of mix in the middle, cook with the lid down for 15 minutes.
They were fantastic, I was extremely amazed and so were lots of people on the campsite, word spread like wildfire on the site and we ended up with lots of people coming to have a look.
